Having food allergies has made enjoying some of my favorite recipes a challenge. It also leads to much experimenting in the kitchen. For years I have wanted to find a Greek style vinaigrette that I could make and enjoy at home, but every recipe I tried was lacking in some way. After recently learning that I am allergic to garlic, I decided to start looking at recipes to see what I thought would work to incorporate into my garlic free vinaigrette. After many trials, I have developed a very satisfying Greek vinaigrette that is not too acidic on the tongue and has a wonderful flavor.
Will’s Greek Vinaigrette
Combine ingredients in a blender and mix thoroughly.
½ cup olive oil
½ cup rice vinegar
½ cup red wine vinegar
2 tsp onion powder
1 tsp oregano (I use a heaping teaspoon)
1 tsp basil
1 tsp kosher salt
1 tsp Dijon mustard
2 tsp sugar (or 1 packet of Truvia)
