Spear Family Cooking: Swiss Green Beans


Swiss Green Beans | Hansen-Spear Funeral Home - Quincy, IllinoisI just finished cutting red and green peppers into julienne strips for roasting.  Why? I cook when I am nervous or need to start a project, and this blog is a new project.  I will probably have some great new recipes by the time I get this written.  I am hungry already!

My mother, Jean, used to walk into the kitchen, look around, and ask, “Theresa do you have a test at school?”

Of course, I do love to cook and I love to share what I cook with others.

My mother-in-law, Charlotte, always prepared  this Valpo Guild recipe for Christmas dinner, and  I still prepare it because our family loves it.


Swiss Green Beans


 Sauté:   (until translucent)
1 cup – onion
4 Tbs – butter
2 tsp – sugar
1 tsp salt
1/2 tsp pepper

Add:   (until melted)
2 cups – sour cream
1 lb. – Swiss Cheese
4 cans -French Style Green Beans   (drained)

Spray a 9X13 Casserole dish with nonstick spray.

Place mixture in dish and bake at 350 for 1 hour.


Sprinkle on top
1 cup – bread crumbs mixed with 4 Tbs melted butter


Gluten free version: 

1 cup – Schar bread processed  to crumbs with 4Tbsp melted butter
