Spear Family Cooking: Crab or Hot Dogs?

I am up for sharing a meal from a few recipes I have played with from cooking classes and dining out.   (Crab cakes, salad and basmati rice)  I will also share an old standby which Jeff loves.  (Baked beans with hotdogs)

Kid's Cookbook | Hansen-Spear Funeral Home - Quincy, IllinoisI love to experiment, and this goes back to my early childhood.  My Aunt Shirley and Uncle Wayne gave me a cookbook for Christmas, and I have a picture of it to share with you.  It is full of food stained pages!  (My favorite recipes)  It is a marvelous treasure, and I may cook a few of the recipes for Jeff in the near future and then share them.   I love taking cooking classes, reading food magazines, watching the Food Channel and eating creative meals at restaurants so I can experiment at home.   This tells all of you how open minded my family is when it comes to food!

The Crab cake recipe is my version of a recipe from a cooking class with Chef Cory.  The crab meat can be purchased in the refrigerator department of the local grocery stores and at Kohl’s Cash and Carry Showroom.

The salad is romaine lettuce with dried fruit, a candied pecan recipe I put together from Chef Randy’s cooking class in Charleston, SC, and it is topped with my version of a Lemon Cumin Salad Dressing.

For those who are not fish lovers, I am sharing our baked beans and hot dog meal.

It is perfect for nights like tonight.  Gluten Free Pantry Yankee Cornbread and Muffin mix is a quick and yummy companion dish.

Crab Cake with Aioli, Salad with Lemon Cumin dressing and Sugared Nuts and Basmati Rice.


Crab Cakes with Aioli

Combine all ingredients:

2 tbsp – mayonnaise
¼ tsp – dry mustard
1 tsp – seafood seasoning
1 tsp – lemon juice
2  – large eggs
2 tsp – Worcestershire sauce (Lea & Perrens is Gluten Free)
1 tbsp – melted butter
1 tbsp – mustard
½ tsp – Paprika
¼ tsp – White pepper

1 lb – crab meat (Check crab for shell – break up)
1 cup – bread crumbs ( ½ – Udi’s gluten free bagel – processed)

Form into cakes – (wet)
Pan fry – in Grape seed oil – over medium heat

(or Bake at 400 – turn over when golden brown)


Dipping Sauce

½ cup – mayonnaise
1 clove – garlic, minced
2 ½  tbsp – olive oil
½ tsp – lemon juice
pinch cayenne
salt to taste

Lemon Cumin Salad Dressing

Combine and Mix Well:

1 cup – Canola oil
½ cup – Lemon juice
¼ cup – honey  (or 2 pkg stevia)
1 ½ tsp – Cumin
½ tsp – salt
¼ tsp –  pepper

Sugared Nuts (for Salads)

10oz pkg – Pecan or walnuts

Add :

¼ c white sugar

combine with:

nuts and spread on parchment paper lined cookie sheet

Bake:  350 for 12 minutes

Pull  apart and turn

Bake 2 minutes

If you want a little spice, add this combination to the egg whites instead of just sugar.


1/8 cup – brown sugar
1/8 cup – white sugar
1/4 tsp – 1/2 tsp – cumin
1/8 tsp – 1/4 tsp – cayenne pepper



Baked Beans with Hot Dogs

In a mixing bowl- mix:

1 can (1lb.15oz) Pork N’ Beans
½ cup brown sugar
½ cup ketchup
3 T Worcestershire Sauce (Lea & Perrens is Gluten Free)
2 T dried onions or one large onion, chopped
4 hotdogs – cut (Hebrew National or Schwan’s are Gluten Free)
Pour into casserole pan/ uncovered

400 for 1 hour – until thick
