One of Charlotte’s dear friends, Liz Long, who passed away April 11, 1999 made this version of a pate’ roll whenever she attended an event at Charlotte and George’s home.  Charlotte loved it enough to ask for the recipe and then share the recipe.

It is a little messy putting the cream cheese mixture on, but rolling it in nuts holds it nicely adding texture.

The recipe calls for 1 cup of nuts, but I always use more. Put them in a deep dish pizza pan and roll/press the nuts into the cream cheese outer layer.  Put wax paper or parchment paper over the roll and pick it up to transfer to the refrigerator for chilling.  Reshaping can be done while in the paper.

When you are ready to plate, use 1-2 spatulas to transfer it.  Feel free to dress the plate with red pepper bits or parsley.

Assorted crackers with a spreading utensil completes the dish.

Again, it is good to remember those who have touched our lives like Liz Long.



Liver Roll Appetizer

Mash with fork and shape into a roll:
1 lb Braunschweiger
½ tsp basil
3 Tbsp – grated onions
1 clove – garlic – minced

Cover the roll with this mixture:
8 oz – cream cheese
½ clove – garlic crushed/ minced
2 drops Tabasco or Franks hot sauce
1 Tbsp – mayonnaise

Roll the log in chopped nuts (1 cup)

Serve with crackers
